Work catering #32: Fusion baking! Chocolate chip cookie + Cheesecake = Cheesecake chocolate chip cookie slice!

Here's a simple maths equation for you.
Chocolate chip cookies + Cheesecake = ????

It's simple! Cheesecake Chocolate chip cookie slice =D One of the best inventions ever ^___^" Fusion of two delicious sweets!!! The cheesecake layer is supposed to be sandwiched in between the two layers of chocolate chip cookie but I think my ratios were a bit odd.. Still delicious though :D

Cheesecake Chocolate chip cookie Slice
Recipe adapted from Choc Chip Uru of GoBakeYourself

Ingredients

Cookie
1 cup (225g) butter
1 1/2 cups brown sugar
2 tsp vanilla essence
1 tbs milk
3/4 tsp salt
1 egg
1 tsp baking powder
2 cups plain flour
1 cup chocolate chips

Cheesecake
250g cream cheese, softened at room temperature
1/2 cup caster sugar
1 egg
1/2 tsp vanilla essence

1. Preheat oven to 170oC. Grease and line 20x30cm baking tray with baking paper.
2. Melt butter in saucepan and stir in sugar and essence. Initially it will stay separated but keep mixing until combined and there is no more floating butter. Allow to cool.
3. Beat in egg and milk.
4. Stir through the flour, salt and baking powder until just combined. Fold through chocolate chips.
5. Spread half of the batter into the base of prepared pan into a even layer. Refrigerate this layer and remaining dough until needed.
6. Beat cream cheese and caster sugar in a bowl until pale and fluffy. Beat in the egg and vanilla essence until mixture is smooth.
7. Pour mixture over the top of cookie layer.
8. Make flat disks with remaining cookie dough with your hand and gently press on top of cheesecake batter. not all the batter must be and won't be covered but try your best ^^
9. Bake for 30-35 minutes or until golden brown. Let cool completely to room temperature then refrigerate. Cut into squares and serve!

Also with the warmer weather last week I decided to bake something summery. Haven't baked a bundt cake in a while so time to get out the bundt tin for this cake!

Mixed berry bundt cake
Recipe adapted from The way the cookie crumbles

Ingredients
Cake
2½ cups plain flour
2 teaspoons baking powder
225g unsalted butter, at room temperature
zest of 1 lemon
juice of 1 lemon
1 tsp salt
1¾ cups caster sugar
3 large eggs, room temperature
½ teaspoon vanilla essence
¾ cup buttermilk, room temperature (I didn't have any so used thickened cream instead)
2 cups mixed berries, frozen or fresh

Glaze
1½ cups icing sugar
juice of 1 lemon
1 tablespoon unsalted butter, very soft
Dripping glaze....
1. Preheat oven to 180oC and grease bundt tin.

2. Beat the butter, lemon zest, salt, and sugar with electric mixer until light and creamy.
3, Beat in eggs one at a time until incorporated. Add vanilla.
4. Fold in flour, baking powder and buttermilk (or cream) alternately, mixing just until incorporated.
5. Carefully fold in the berries and mix until combined. Transfer batter to prepared bundt tin smoothing the top.
6. Bake for 50-60 minutes or until skewer inserted in the center comes out clean. Transfer to wire rack to cool.
7. For the glaze, combine sugar, lemon juice and butter in small bowl. Whisk until smooth. Remove cake from oven and spoon oven cooled cake.

Work catering #10: Cheesecake and Chocolate for a Chocoholic! =p

Cheesecake =D
I made it to week 10 of work catering =D hahhaha...

As promised last week, I made some chocolatey goodies for this week's catering :) My friend was giving her talk and she is a CHOCOHOLIC! I knew she would be a bit stressed so I baked her some BROWNIES! this time I added in MORE chocolate =p white chocolate bits... and some macadamia nuts and mixed berries!!

So happy she liked them =) It's the same recipe that I've used which you can find here. Just added 125g white choc bits and 110g macadamia halves and 1/2 cup frozen mixed berries but really.. you can add anything you like. I'm just trying to find the best combination ^^

I also know that not everyone likes chocolate, so I made a Blackforest cheesecake. I am in love with this recipe!!! This is the third time making it! It's so simple and tastes great =D and it's a NO BAKE recipe!

I had a little trouble with the cherry syrup topping ><" but other than that it was fine.

BLACKFOREST CHEESECAKE
Recipe adapted from ninemsn
Ingredients
Base
250g chocolate ripple biscuits
125g butter, melted (I only used 100g and seemed to work well)

Cheesecake
250g cream cheese, cubed, softened at room temp
165g (3/4 cup) caster sugar
1 tbs lemon juice
300ml thickened cream
3 tsp powdered gelatin
125g hot water
425g can pitted black cherries (reserve juice for syrup)

Cherry topping
3/4 cup cherry syrup
1 tbs corn flour
1 tbs caster sugar
1 tbs rum (i didn't have any so didn't add it)

1. Process chocolate biscuits until resembles fine crumbs. Add melted butter and process until well combined. Press biscuit base into lined baking tray (20cm x 30cm) using back of spoon. Refrigerate for 30 minutes or until firm.
2. Beat cream in small bowl with electric beater till soft peaks form. Keep aside.
3. Sprinkle gelatin over small bowl of hot water and stir until dissolved. Keep aside to cool.
4. Meanwhile beat cream cheese, caster sugar and lemon juice in separate bowl until smooth. Fold in cream mix. Fold in gelatin mix.
5. Pour half batter on top of biscuit base. Carefully press cherries into cream cheese layer then finish with final layer of cream cheese mixture. Refrigerate until set (~3 hours). 
6. For cherry syrup, place ingredients in small saucepan and heat until mixture boils and thickens. Stir in rum. Allow to cool before spreading onto cheesecake (but don't let it cool too much otherwise it'll set and become clumpy >< - speaking from experience)

Berry and banana muffins!

Another muffin recipe =) I found it online.. i'm guessing you guys probably won't be making this anytime soon as it involves Bananas (they are really expensive atm!!!) but I shall share anyways :)

BERRY and BANANA MUFFINS

Ingredients
2 cups plain flour
2 tsp baking powder
2 tsp ground cinnamon
pinch of salt
2 ripe bananas, mashed
150g fresh or frozen blueberries (or you can use a variety of berries)
3 tbsp honey
3 tbsp vegetable oil
1 large egg
3/4 cup milk
1/3 cup caster sugar (the original recipe didn't have this but if you are a sweet tooth like me.. you'll need some sugar in this recipe because the honey isn't enough =p)

1. Preheat oven to 180oC.
2. Sift the flour, baking powder, cinnamon and a pinch of salt into a bowl. Add the sugar, banana and blueberries and lightly toss the fruit through the flour (you don't want the berries to break up too much otherwise your muffin mix will be blue!!!)
3. Whisk the honey, vegetable oil, egg and milk together in a small bowl. Add this to the dry ingredients and lightly combine.
4. Spoon batter into a lined muffin tin and bake for 20 minutes or until cooked inside.
